A simple combination of Glutafin Penne mixed with half fat Cheddar, pickled onions, cherry tomatoes and diced apple with a light oil free dressing accompanied by a pickle topping. Ideal for light meals, picnics and packed lunches

Ingredients
175g/6oz Glutafin Penne cooked following pack instructions, rinsed with cold water and left to drain.
110g/4oz Cheddar cheese (half fat cubed)
2 Medium red skinned apple cored and diced combined with 1 lemon (juice of)
75g/3oz Cherry tomatoes (halved)
50g/2oz Cocktail pickled onions
50g/2oz Cocktail gherkins
3x 15ml tbsp Oil free dressing
110g/4oz Ploughmans pickle
Method
1.Combine cooked pasta with the remaining salad ingredients and mix with the dressing.
2.Place in a salad bowl lined with mixed salad leaves and top with the pickle just before serving.
