What is gluten and what purpose does it have in flour?
It’s a protein that is commonly found in rye, wheat and barley. This protein helps trap the air in bread and cakes enabling them to rise during baking.What’s the difference between cooking with conventional flour and gluten free flour mixes?
Gluten free mixes have a much stickier texture when mixing. So some baking methods vary compared with regular flour eg. you would knead the mix for pastry and not bread – the exact opposite of conventional flours. When creating recipes that require rolling or stretching, such as pastry or scones, the addition of a teaspoon quantity of gluten free xanthan gum helps achieve good results.Is there a difference between gluten free flour and gluten free flour mix e.g. Glutafin Mixes?
There are naturally gluten free flours that are available in supermarkets. But, in order to best replicate the functionality of standard flour, Glutafin has developed the Multipurpose White and Fibre Flour Mixes as a replacement for gluten containing flour. These contain a mixture of different flours such as rice, corn etc. to
combine the benefits of various ingredients and to best ensure the product still works in providing elasticity and a good texture into the end recipes. Some gluten free recipes may recommend combining gluten free flour with buckwheat, rice, or potato flour.
With Glutafin mixes there is no need to do this as they already contain the perfect mix of flours to give you great results every time!

Glutafin Multipurpose White and Fibre Flour Mixes
For both beginners and experienced cooks we strongly recommend our two Multi purpose Mixes; we have a white and a fibre variety. Both these Mixes have been designed to replicate standard white and wholemeal fl ours and you can use them in the same way that you would use normal flour, essenti ally in any of your gluten free cooking or baking. They are also good sources of both calcium and folic acid. The mixes can be used to bake bread in your oven, or bread machine, biscuits, scones, batt ers, pastries, sauces...it really is multipurpose. We recommend using the white mix for Yorkshire puddings and fi bre mix for fruit cakes, as we know you won’t be disappointed.
